Rosemary Olive Oil Chocolate Chip Cookies (GF + DF)
The unique flavor combination of savory rosemary and olive oil with dark chocolate make these cookies a true decadence. These cookies have a crunchy texture that remind me of shortbread. They’re perfect for enjoying with a nice cup of tea!
Recipe
Yield // a little under 1 dozen
Ingredients
1 cup gluten free flour (I use Bob’s Red Mill 1-1 Baking flour)
1/4 cup oat flour
1/4 tsp baking soda
1/4 tsp baking powder
dash of sea salt
1/3 cup olive oil + 2 tbsp
1 egg
1/2 cup coconut sugar
2 tbsp chopped fresh rosemary
1/3 cup chocolate chips (I love the brand Enjoy Life)
How To
Preheat oven to 350 F
Combine the egg, olive oil, and coconut sugar in a medium mixing bowl until creamy
Add in the gluten free flour, oat flour, baking soda, baking powder, and salt
Stir until a dough forms
Fold in the rosemary and chocolate chips
Roll into 1-inch balls and bake for about 10 minutes
Enjoy!
