Rosemary Olive Oil Chocolate Chip Cookies (GF + DF)

The unique flavor combination of savory rosemary and olive oil with dark chocolate make these cookies a true decadence. These cookies have a crunchy texture that remind me of shortbread. They’re perfect for enjoying with a nice cup of tea!


Recipe

Yield // a little under 1 dozen


Ingredients

  • 1 cup gluten free flour (I use Bob’s Red Mill 1-1 Baking flour)

  • 1/4 cup oat flour

  • 1/4 tsp baking soda

  • 1/4 tsp baking powder

  • dash of sea salt

  • 1/3 cup olive oil + 2 tbsp

  • 1 egg

  • 1/2 cup coconut sugar

  • 2 tbsp chopped fresh rosemary

  • 1/3 cup chocolate chips (I love the brand Enjoy Life)


How To

  1. Preheat oven to 350 F

  2. Combine the egg, olive oil, and coconut sugar in a medium mixing bowl until creamy

  3. Add in the gluten free flour, oat flour, baking soda, baking powder, and salt

  4. Stir until a dough forms

  5. Fold in the rosemary and chocolate chips

  6. Roll into 1-inch balls and bake for about 10 minutes

  7. Enjoy!
