Sky's Rooted Nutrition Chocolate Chip Cookies (GF+V)

These are my famous Sky's Rooted Nutrition chocolate chip cookies. They're also gluten free, dairy free, and vegan (hence the Sky's Rooted Nutrition descriptor). The ingredients are still whole and nutritious, but they don't lack that sweet and caramel-like taste that we're all craving from a classic chocolate chip cookie. They require such minimal ingredients and can even be made in one bowl. One batch makes just under two dozen cookies.

Ingredients

  • 1 cup coconut sugar (brown sugar would work too)

  • 2 tsp vanilla extract (optional to do half vanilla and half almond extract)

  • 2 tablespoons flaxmeal

  • 6 tablespoons dairy free milk of choice

  • 2/3 cup coconut oil, melted

  • 2 cups almond flour

  • 2 cups oat flour, gluten free

  • 1 tsp baking soda

  • 1/2 tsp sea salt

  • 1/3 cups chopped pecans or walnuts, optional

  • 1 cup mini chocolate chips, definitely not optional

How To

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet.

  2. In large mixing bowl, whisk the sugar, vanilla extract, flaxmeal, dairy free milk, and melted coconut oil until smooth.

  3. Mix in the almond flour, oat flour, baking soda, and salt until a fluffy dough forms. Fold in the chopped nuts and chocolate chips until well incorporated.

  4. Use a cookie scoop to drop about 2 tbsp of dough into slightly flattened balls on cookie sheet.

  5. Bake for about 8-9 minutes until slightly golden. Enjoy!
