Cashew Dream Sauce (GF+V)
The main ingredient in this sauce is cashews. The first time I experimented with this sauce, I was absolutely amazed at the smooth and dreamy texture cashews could produce with a little help from soaking them in water and a blender (my favorite appliance). My favorite way to use Cashew Dream Sauce is as a salad dressing. Sometimes, I'll even mix it with a little balsamic vinegar to create a creamy balsamic vinaigrette.
Recipe
Ingredients
2 cups soaked raw cashews (soak for at least 2 hours or overnight for optimal creaminess)
2-3 garlic cloves
Juice of 1 lemon
1/4 cup packed fresh cilantro
1 tsp salt
1/4 tsp black pepper
How to
Rinse and drain cashews and add to a blender.
Fill the blender with water up to the top of the cashews. Start with less water, you can always add more water if you want a thinner sauce, but you can't take it out!
Add remaining ingredients.
Blend in high until smooth.
Add more water if you'd like a thinner sauce or leave as is. The sauce should keep for about a week in your refrigerator. Enjoy!
