Apple Pie Banana Bread (GF+DF)

This fall-inspired loaf combines the two most nostalgic treats: banana bread and apple pie. Warm spices like cinnamon and nutmeg meld beautifully with sweet bananas and diced apples

Ingredients

Banana Bread Batter

  • 2-3 ripe bananas, mashed (the more bananas, the more moist bread will be)

  • 1/4 cup olive oil

  • 1/4 cup maple syrup

  • 1/4 cup dairy free milk

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 cup oat flour

  • 1/2 cup almond flour

  • 1 tsp cinnamon

  • 1/8 tsp nutmeg

  • 1 tsp baking soda

  • 2 tsp baking powder

  • 1/2 tsp salt


Apple Filling

  • 1 apple, diced into 1/4” cubes

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 cup pecans, finely chopped

  • dash of salt


How To

  1. Preheat oven to 350 F. Grease or line a standard sized loaf pan (I use an 8x4 for a "taller" loaf).

  2. Cream together all wet ingredients until smooth in a large bowl.

  3. Add the oat flour, almond flour, baking powder, cinnamon, and salt to the wet ingredients and mix until well incorporated.

  4. In mixing bowl, combine your diced apples with cinnamon, nutmeg, chopped pecans and salt until apples are well-coated.

  5. Pour 2/3 of the banana bread batter into lined loaf pan. Sprinkle 2/3 of the apple filling overtop the batter. Add the remaining banana bread batter to the pan. Top with the remaining apple filling mixture.

  6. Bake for about 50-60 minutes or until golden brown and toothpick comes out clean. 

  7. Let cool completely before slicing.
